Springfield, IL (CAPITOL CITY NOW) – A popular chain of breakfast restaurants will be opening its first location in the Springfield area.

The Springfield Business Journal reports “First Watch” is remodeling the former Red Robin location off Veterans, and could be open as soon as the fall.

“You may recall Red Robin closed not quite a year ago — I think it was last August,” said Michelle Ownbey, Executive Editor, on the WTAX Morning Newswatch.  “The property actually changed hands a few months ago.  But, it was purchased by Quattro Development — they’re a (Oak Brook)-based real estate developer

Ownbey says Quattro has confirmed that First Watch is the tenant.

Among the offerings: Bacon drenched in maple syrup, and ice cream and a waffle for breakfast.

Two businesses are planning second locations in Springfield.  Ownbey says one of those is Chick-fil-A — planning to take over the site of a just-closed Burger King off North Dirksen Parkway near Sangamon Avenue

“We have a real estate firm out of Michigan that’s bought that property.  They filed the zoning petition to redevelop it,” said Ownbey.  “Sounds like they’re going to expand it and make it larger than it originally was.  No word on when that one will be open.  Chick-fil-A  themselves is still refusing to comment.”

7 Brew just opened a Springfield location in May; and now Ownbey says they’re opening a second location, also on North Dirksen Parkway, near the Club Car Wash location.

“They’ve already demolished…an old kiosk that was on there from before.  The’ve already torn that down, and they’re already doing some site work there,” said Ownbey.  “Looks like that will take shape pretty quickly.”

Ownbey says the first 7 Brew location on Wabash, closer to White Oaks Mall, has seemingly continuous traffic.
