Potbelly to open second Springfield location Tuesday

Springfield, IL (CAPITOL NEWS NOW) – The second Springfield location of a popular sandwich chain is days away from opening.

Officials with Chicago-based Potbelly Corporation say a Potbelly Sandwich Works location at 3061 Wabash Avenue will open Tuesday, May 13. That’s in the Southwest Plaza II Shopping Center, and not far from White Oaks Mall.

The company describes the location as “located in a bustling corridor surrounded by big-box retailers and a high concentration of residential and retail developments, the new shop will serve Springfield residents, visitors and the city’s thriving workforce.”

Rob Wilbern, described as “a seasoned entrepreneur and multi-unit franchisee,” already owns Potbelly restaurants in other parts of this region, ranging from Champaign-Urbana to Decatur, and will be the owner of this location.

“Springfield’s rich history and a strong sense of community make it the perfect place for Potbelly,” said Wilbern, in a news release. “There’s a real sense of pride in bringing a brand with deep Illinois roots into the heart of the state. We’re proud to grow the Potbelly footprint here and look forward to serving our neighbors with toasty sandwiches, signature salads, hand-dipped shakes, and freshly-baked cookies.”

Hours of the new Potbelly location will be 10:00 a.m. until 9:00 p.m. daily.

It’s not clear how many people the store will employ.

Wilbern is already planning on opening more locations in Central Illinois.

A Potbelly location is available at Springfield Memorial Hospital.
